Chemical Properties of Glycerin

Colorless, transparent, odorless, viscous liquid with sweet taste and hygroscopicity. Miscible with water and ethanol, aqueous solution is neutral. Soluble in 11 times ethyl acetate, about 500 times ether. Insoluble in benzene, chloroform, carbon tetrachloride, carbon disulfide, petroleum ether, oil.

Uses of Glycerin

(1) Water retention agent (used in bread, cake type); carrier solvent (used in spices, pigments, non-water-soluble preservatives, etc.); thickening agent (used in beverages, prepared wines, etc.); plasticizer (confectionery, desserts, meat products); sweetener.
